How to Store Microgreens for Maximum Freshness

You've just received a delivery of beautiful, fresh microgreens from Bijou Greens — vibrant, fragrant, and full of life. Now the question is: how do you keep them that way? Proper storage can mean the difference between microgreens that stay crisp and flavorful for a week and ones that wilt within a couple of days. Here's everything you need to know.

The Golden Rule: Keep Them Dry and Cool

Moisture is the enemy of stored microgreens. Excess water on the leaves accelerates decay and encourages mold growth. Temperature matters too — microgreens stay freshest in a cold environment, ideally between 35°F and 40°F (about 2°C to 4°C), which is the temperature range of most home refrigerators.

The combination of cool temperature and low surface moisture is the foundation of every storage method below.

Method 1: The Paper Towel Container (Best for Most People)

This is the simplest and most effective storage method for home use.

Step 1: Take a clean, dry storage container with a lid — a shallow glass container or a plastic clamshell both work well. Line the bottom with a dry paper towel.

Step 2: Spread your microgreens gently in a single layer (or close to it) on top of the paper towel. Avoid packing them in tightly — air circulation helps prevent moisture buildup.

Step 3: Place another dry paper towel loosely on top of the microgreens. This absorbs any condensation that forms on the lid.

Step 4: Close the container and store it in your refrigerator, ideally in the crisper drawer. The paper towels will wick away excess moisture and keep the greens dry.

With this method, most varieties — including broccoli, kale, and radish microgreens — will stay fresh for 5 to 7 days. Check the paper towels every couple of days and replace them if they feel damp.

Method 2: The Breathable Bag

If you don't have the right container, a partially open zip-lock bag also works. Place a paper towel in the bag with your microgreens, squeeze out most of the air, and leave the bag slightly unzipped so moisture can escape. Store in the fridge. This method is especially good for larger quantities.

Method 3: Live Trays (The Ultimate Freshness Hack)

Here's something many people don't realize: if your microgreens arrive in their growing tray — roots still intact — you can keep them alive and growing. Simply place the tray near a window with indirect sunlight and water the soil (not the leaves) lightly every day or two. Harvest what you need by snipping with scissors, and the rest continues to stay alive and fresh.

  • Stacking heavy items on top. Microgreens are delicate. Placing other groceries on top of the container crushes the leaves and causes bruising, which speeds up decay.
