Proper storage can mean the difference between microgreens that stay crisp and flavorful for a week and ones that wilt within a couple of days. Here's everything you need to know.
The Golden Rule: Keep Them Dry and Cool
Moisture is the enemy of stored microgreens. Excess water on the leaves accelerates decay and encourages mold growth. Temperature matters too — microgreens stay most fresh in a cold environment, ideally between 35°F and 40°F (about 2°C to 4°C), which is the temperature range of most home refrigerators.
The combination of cool temperature and low surface moisture is the foundation of every storage method below.
The Paper Towel Container
This is the simplest and most effective storage method for home use.
Store your microgreens in a clean, dry, airtight container. We already package them with moisture-absorbing pads, but if needed, you can add a dry paper towel to help absorb any extra moisture and keep them fresh longer.
With this method, most varieties — including broccoli, kale, and radish microgreens — will stay fresh for 7 to 12 days. Check the paper towels every couple of days and replace them if they feel damp.
What to Avoid
A few common mistakes that shorten the life of your microgreens:
- Washing before storing. Washing is not necessary for most of our varieties, as our microgreens are grown pesticide-free in a clean indoor environment and are ready to enjoy as is. Varieties like sunflower shoots and melon may shed bits of their natural shells, so a quick rinse before consumption can be helpful. Do not store after rinsing as they will retain moisture.
- Storing in a sealed container without moisture absorbtion. Condensation builds up inside sealed containers, creating a humid environment that leads to wilting and mold.
- Leaving them at room temperature. Microgreens are living tissue. At room temperature, they respire faster, use up their energy, and wilt quickly. Get them into the fridge within an hour of delivery.
